These Banana Oatmeal Cookies are hands down the very best banana flavored cookie I have ever had. Not only are they are moist and chewy for times, but they are unmistakably banana-y.

Banana may be one of those flavors that could get lost when you bake with this. It can be quite delicate taste. It always bums me out when that occurs, cause I really like the taste of banana. And so does the hubs.

So when good brewed banana treats come along, we go a little mad for them.

These biscuits make the record of banana items to go mad for. Without a doubt.

And they are so moist, they melt in your mouth. In addition, using both banana and oats in them, they're basically healthy, right? And ideal for breakfast!

Creating them is just as easy as eating them.

You start by mixing all those lovely ingredients together.

I have to warn you. The smell of the mixture -- with the banana -- is equally intoxicating. The hubs was in the kitchen making the dough together with me (we made a bargain that contained him with me) and we both had to work hard not to put our faces, or even a straw, straight in to it.

You then add all of the dry ingredients (which usually means you simply use one bowl yay!) And mix it all together!

To bake themspoon about a tablespoon of bread and make a thick disc, as opposed to a ball. They spread somewhat when baking, so don't place them too close together. Bake them for approximately 10-12 minutes for a fine, moist cookiecutter. So yummy!

1 other thing I really like about this recipe is really where it came out.

My grandma (my father's mom) passed away in 2008. After I started draining a lot a couple of years ago, my uncle gave me her cookbook that he'd had didn't use. I've had it in my list to create a number of her desserts ever since.

It was a custom for my grandmother to make them every Christmas! She also gave everyone a big tin of these, which was quite an effort with 6 sons.

I now know exactly how much of a feat it had been! My goodness. She made them using a conventional gaufrette iron that goes over an open flame. My father and I had them around the stove. They cook very fast and you have to be precise. Too little time and they kind of disintegrated to iron. Overly long and they burnt to the iron and we still needed to wash it out.

My father was massaging the batter and removing the cookies, I had been operating the iron, the hubs was timing things. It took quite a few attempts to get it , but they were so good! I have tried to create them again on my own and it never works. I'd really like to share the recipe, however, the dang irons are all so hard to discover. And pricey. Sooner or later, I would love to just earn a cookie cutter with the exact same gaufrette flavor.

For now though, I'm sharing these biscuits. I really don't think I had them made them, but they're from her novel.

It is such an enjoyable recipe book to check through, go to these guys also. There are many handwritten pages, including clippings and newspaper recipes which were taped to the publication. I adore the way that they used to compose recipes in the newspaper -- they'd the individual who filed it is name and adorable little tales. It is so fun to read through them! What another time on the planet!

Anyways, I do not really know where this recipe originated from. The paper looks like it was on a flier out of their square dance band or something (they have been big into square dance ). It's definitely from West Virginia, in which they dwelt.



Either way, I am so happy to finally share a recipe from her book with you! I made a couple of adjustments to make them thicker and puffier and they're delicious. There'll be more to come out of her recipe book, but for the time being enjoy the banana.

Banana Oatmeal Cookies



Yield: 34-36 COOKIES

 


INGREDIENTS:



1 cup brown sugarpacked

1/2 cup sugar

1 egg

1 teaspoon vanilla extract





1 1/2 tsp cinnamon

1 teaspoon baking soda

1/4 tsp ground cloves

2 tsp cornstarch

3 cups old fashioned oats

DIRECTIONS:

1. Mix together egg, brown sugar, egg, sugar, vanilla extract and mashed bananas until well combined.

3. Stir in yogurt.

5. Spoon tablespoons of dough on a cookie sheet covered with parchment paper. Flatten dough just a little bit, into thick disks. They will disperse a bit when boiled.

7. Remove from oven and cool on cookie sheet for 3-4 minutes, then move into cooling rack to finish cooling.
